My blog is not all about vegetarian recipes but I do have an amazing repertoire of family-friendly vegetarian recipes. One of my daughters is vegetarian, so I’m always designing new vegetarian recipes that suit her and the whole family alike. This keeps our family mindful of the amount of meat we consume.

1. Herbed Frittata with Vegetables, Cheddar & Feta
My frittata recipe is filled with just the right amount of healthy and colourful sautéed vegetables, farm fresh eggs, fresh herbs, cheddar cheese for creaminess and feta cheese for tanginess.
2. Butternut Squash Soup with Coconut Milk
This creamy and golden butternut squash is the perfect warm and comforting meal on a chilly day.
3. Southwest Black Bean & Corn Soup
Your taste buds will appreciate this pleasantly spicy and subtly smoky soup full of lively flavours. It’s jammed packed with ingredients typically associated with the American southwest like black beans, corn, bell peppers, lime juice, tomatoes and chipotle peppers in adobo sauce.

I could easily think of a dozen things to make with cauliflower, but this creamy and cheesy cauliflower soup is my favourite. This comforting soup comes together in a snap and is absolutely perfect to serve on a fall day when the weather starts to get cooler.

This salad is influenced by the wonderful flavours of the Mediterranean. It’s bursting with protein-packed quinoa, hearty chickpeas, colourful red peppers, crispy cucumbers, sharp red onions, kalamata olives, sun-dried tomatoes and salty feta cheese.
6. Butternut Squash & Spinach Stuffed Shells
Roasted butternut squash is mashed and combined with ricotta, Parmesan, spinach, and seasonings to make a golden and green speckled filling that stuffs jumbo pasta shells. The shells are nestled over a creamy garlic white sauce, sprinkled with mozzarella cheese then popped into the oven to bake until golden and bubbly.
7. Mexican Buddha Bowl
