The signature patisserie-style éclair that everyone loves is given a “s'mores” makeover. It’s layered with graham crackers, sweet vanilla custard, a decadent chocolate ganache and fire-roasted marshmallows. Everyone, including you, can have fun around the fire pit roasting marshmallows for the finishing touch to top off this S'mores Éclair Dessert!
Roasting the marshmallows causes the sugars to caramelize and turns them into a golden-brown treat giving them a signature toasty flavour and that gooey texture that everyone loves. They make the perfect garnish for this dessert.
This easy-to-prepare dessert can be made ahead (minus the marshmallows) leaving you with lots of time to enjoy fun creating memories with your family and friends outdoors by the fire. You'll feel like you're away at summer camp when you're still in your backyard! It's the perfect way to spend a summer night.

Give Me S’More Éclair Dessert
Ingredients
- 102 g package 4 serving size instant vanilla pudding mix
- 1 ½ cups cold milk
- 237 mL container 35% whipping cream
- 15 graham cracker wafer sheets 2 x 5” each, possibly more
- 1 cup semi-sweet chocolate chips
- ¼ cup butter
- 18 large marshmallows possibly more
Instructions

In a large bowl beat pudding mix and milk with a mixer on medium-high speed for 2 - 3 minutes until thickened. Transfer the pudding to a medium bowl and set aside. No need to wash out the mixing bowl for the next step.

In the same mixing bowl add whipping cream and beat on high speed until stiff peaks form, about 3 minutes. Fold the pudding into the whipped cream and gently mix with a spatula to combine.

To assemble the layers, lightly grease the bottom and sides of a 9 x 9” glass or ceramic baking dish. Line the bottom of the dish with about 5 sheets of graham crackers, breaking up some pieces to fill in spaces. Gently spread half of the pudding-cream mixture over the crackers.

Place a second layer of about 5 graham crackers over the pudding-cream filling. Gently spread the remaining half of the pudding-cream mixture over the crackers.

Place a third layer of about 5 graham crackers over the pudding-cream filling. Set aside while preparing the ganache.

Meanwhile, make the chocolate ganache topping. In a small saucepan, add chocolate chips and butter. Heat gently over medium heat, stirring often until the chocolate is completely melted, smooth and glossy.

Immediately spread the warm chocolate ganache over the top of the last graham cracker layer spreading it right to the edges. Refrigerate for a few hours or overnight to allow the chocolate to set and the graham crackers to soften. Reserve the marshmallows for the finishing garnish when fireside.

When ready to serve, head out to the fire pit with those marshmallows and some skewers, and let everyone roast their own marshmallows to top off the dessert. Cut into 9 square servings.
